- Quinoa- I prefer the tri-color type, texture-wise and healthier too. Rinse VERY well. Some prefer to soak beforehand, up to you. - - Simmer it in 1:2 ratio of water, uncovered, with a dash of salt, until it’s absorbed. Turn off heat and cover for 10 mins. Fluff with fork and set aside.
